I’ve Been a Bad, Bad Girl. I’ve Been Careless With My Delicate Body

The thing about living a healthy lifestyle that revolves around eating well and exercising is that unless you’re being paid for it (i.e fitness models, competitors, athletes, endorsers, etc.)  you’re probably going to slip up every so often. I’m well aware that breaks are prime time for slippage. You are no longer beholden to your usual schedule, meaning you have more free time. I typically go into these periods thinking of all the time I’ll have to work out, try new foods, etc, but, being honest, I really just sleep more, watch Netflix, and keep pushing my workouts back.

Sooner or later you’re going to start to feel bad physically and emotionally. If you have gone back to eating less than healthy foods (or you find yourself going to the bar more often…) you’re body is going to start throwing little temper tantrums as it attempts to process all the unsavoriness you’re feeding it.  You’ll also start to feel emotionally crappy. You might not be sleeping as well, you might notice certain areas of your body becoming softer, and you might be upset because you know it’s wrong. Good. You should. And I don’t mean this in a horrible way. I’m a firm believer that you should fuel the body as well as feed the soul. Without both, life would be pretty boring, however going out to the bar all the time and eating takeout on the regs is not feeding the soul: it’s feeding some void. One takeout order: acceptable. Just don’t let it become a habit! And don’t go on an emotional down spin where you restrict everything and start working out an unsustainable level. Use that motivation to humbly get back on the wagon.

One of the first things I needed to start dialing back on was the drinking. Going out 3x a week and having 2 drinks at the bar doesn’t necessarily equal getting plastered, but it does equal a lot of money and empty calories that start to compound. I’m normally pretty good with my finances, but getting $100 less in a paycheck than usual because of exam’s week and going out drinking like I had been meant having the call dad with my tail between my legs. Not going to happen again!  Plus moving into my new, cheaper apartment  means I need to start being a little more militant about my drinking, lest I want to call daddy-o again!

The second thing I needed to get back in my life is yoga. For the past month and a half I haven’t been going to glasses due to a yoga related shoulder injury that just wouldn’t quit. I kept my sanity by making those YOGA MANIA videos (I should start that up again, right?) and working on my handstands at home.  I’d occasionally take some muscle relaxers and bum around about how I did this to myself f. This week, I finally decided I needed to get back on the yoga horse. The night before I went to an ashtanga class my shoulder started acting up again, which made no sense because I hadn’t been going to yoga in ages! And then it all made sense! Chris and I had recently changed our beds around again, and I was back to sleeping on my basic futon mattress instead of a futon mattress on top of a regular mattress. So all along it was my pesky bed that had weakened my right shoulder (I’m rather partial to sleeping on my right side), not my yoga practice. I practically floated to class with joy and had one of the best 90 minute practices in a really, really long time. Time for a new bed! Oh, daddy! Just kidding…But really.

On top of yoga, I’ve started exercising again. I know, sigh, moan, roll your eyes. I’m that girl that constantly talks about how she is going to exercise and never follows through. I know, unappealing, but I’ve been looking back at the women in Oxygen magazine and remembering how much I appreciate a well sculpted body. Plus, I think as humans we need to sweat it out and push ourselves, and since the majority of us no longer have fields to toil in, working out is the next best thing. Yesterday I did a Zuzana Light video that took 25:27! I thought I was going to die. I followed it up with a clean lunch (haddock and corn) and a protein shake. I’m still pretty sore from it all, but I slept like an absolute baby and feel amazingly refreshed this morning. It feels 100% better to be back on the good food, exercise, and healthy mind set.

Our life has ups and downs, and I like to think that we learn a lot from our ‘down’ moments. We learn how to get back on our feet and we start to appreciate how awesome the ‘ups’ really are. So if you are like me and have been slipping for a little bit then pinch yourself on the cheekies and wake up. You don’t have to wait till Monday to shake off your bad habits and start back over again!

The Meals That Got Away

Everything in the kitchen isn’t all sunshine and daisies; sometimes you create  meals that are real stinkers. And, as luck would have it, these off meals are generally the ones you’ve poured the most time and energy into. Nothing sends me into a frenzy of emotional eating  more than taking the third nope-this-isn’t-going-to-work bite of a meal that flopped. By then I’m running to fill the void in my heart (and stomach, duh) with something terrible.  Oddly enough, I got both these recipes off the same blog. Maybe it just isn’t the place for me to get some foodie advice.

Last week I was on Bex Life (I love listening to her talks!) and she had a guest blogger who was giving out a recipe for cauliflower crust pizza. My gluten free heart sang as if it was battling for the win on American Idol.  I love cauliflower and the fact that I didn’t have to utilize any of my insanely pricey gluten-free flour blend made my wallet hum a ditty as well.

Cauliflower Crust Pizza (serves 3)

Ingredients

Crust:

  • 2 heads cauliflower
  • 3 eggs
  • 1/4 cup ground flax
  • 1/4 cup grated pecorino romano cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 tsp dried oregano

Toppings:

  • Sauce (I used a box of crushed tomatoes)
  • Fresh Mozzarella, sliced
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Preheat oven to 350 degrees. In a food processor pulse cauliflower until it’s well processed. Scrape down the sides as needed. Lay cauliflower out on a baking sheet, pre- sprayed with non-stick spray or using a slipat. Bake for 8 minutes. Remove from oven and place in a large bowl. Add eggs, grated cheese, flax and spices. Mix together well. Spoon “dough” onto a pizza stone, covered pizza pan* or baking sheet. Bake for 16-17 minutes. Remove from oven. Spoon sauce onto dough and season with spices. Add fresh mozzarella. Bake for 5-7 minutes. Serve and enjoy!

I mean, look how awesome and clean that recipe looks. I managed to find the particular brand of tomatoes—Pomi—she mentions in her video. I even went authentic and sprung from the fresh mozzarella, like any good Italian Mamma would do. Wait, there’s more, I even bought the really shnazzy Boars Head pepperoni. Man, I had high, high hopes, but I knew something wasn’t going right when, after taking the ground up cauliflower out of the oven for the third time, it wasn’t the golden, crispy brown as seen on the video. Mind you my food processor is a fraction of the size of hers, so it took be 12 painstaking batches. I baked the pizza for 30 minutes and had to accept the crust just wasn’t going to set. I was bumming.

The next recipe I tried was a raw vegan carrot soup with a few simple ingredients: seven carrots, two cloves of garlic, one whole avocado, lemon juice, salt & pepper to taste.

You may know I’m a huge fan of making a batch of soup at the beginning of the week during the school year. Now that summer is rolling around I can start looking towards raw, cold soups, which are perfect for the temperatures we’ll (hopefully) be getting in the near future. I had tried out this recipe a few months back, prior to my juicer, and my blender couldn’t handle the pureed carrots. It sputtered, it grumbled, it said “no smooth soup for you!”  I was left with a chunky, off tasting mess. This time I was so ready, but to no avail it still tasted funny. I wanted so desperately to like it, and I’m sure it’s not a bad recipe, but my taste buds just weren’t feeling it.

Needless to say, I was at least able to salvage a few pictures from the creation.

Yup, making food you don’t end up liking sucks. You’ve wasted time, you’ve wasted money, and if you plan out your meals like I do you probably don’t have much lying around to calm those tummy grumbles. Sometimes all you can do is grab a banana, slather it in some peanut butter, and deal with your melodramatics by watching a C-rate Netflix movie while drinking a glass of nice wine that you had been saving for the ill-fated, extravagant meal….I’m not bitter or anything!

Video: Cleaning house through fasting!

Hello everyone! It has been awhile since I made a video, so I’m very excited to bring you this one. There is a lot of information and I figured you’d rather listen to me while you have some down time than read a tome like post 😉 This is all about cleansing/fasting/detoxing! Living off liquids for a few days (or few weeks in extreme cases!) is a way to let your body heal. Digestion is one of the most labor intensive processes our body goes through on a regular basis. When it isn’t busy digesting our body can go to work “cleaning house” and taking out impurities and toxins from neglected areas. Unfortunately, cleansing is typically not spoken about as a healing process in magazines or television shows. Instead, it is seen as way to get rid of some vanity pounds, so people are very apt to put it down. Obviously, it is way more than that! I encourage you to listen to this video to learn about how to prepare for one, break a fast safely, and be ready for the up and down physical feelings you’ll go through. It may not be something you decide to undertake, but at least you’ll have some information and know that this process goes far beyond the “Master Cleanse” and celebrities trying to fit into an award ceremony dress!

The Tipsy Chef

Last night a friend and I went out to The Farmhouse Tap & Grill. I’m a big fan of drinking there because it has a rustic log cabin feel, indulgent steak tartare, and a great selection of ciders AND Gluten Free beer! I tried one of each and was in tummy heaven. For me, 2 glasses of cider is the perfect kind of tipsy: totally in control, but still feeling a little light on the toes. However, even the smallest amount of sugary alcohol can provoke a mean hangover. Thus, it became imperative to make some food to prepare our bellies before conking out.  I decided on some scrambled eggs with Romano cheese and a plate of smoked salmon.

Crack open five eggs, add some milk, mix together with a fork, and pour it into a pan on medium-low heat. Breakfast foods like scrambled eggs, bacon, and pancakes take time and patience. If you put these items into a pan that is already hot the eggs will seize, the bacon will burn, and your pancakes will be all crusty on the bottom. Instead place the food on the pan before it heats up, that way your food can become acclimated.

Of course, what would a meal be without some photos be? My stove top is a 9.5 out of 10 on the grimy scale, so I decided the theme should follow!

 

Don’t Mind Me, Neighbors, I’m Just Shooting Some Food Porn on the Porch.

The best part of eating healthy the majority of the time means that when you do decide to splurge you generally have a lot less guilt. You’ll also find yourself returning to the same indulgent, greasy, stick to your inside’s foods, which is nice. My favorite “naughty meal”, aside from Amy’s (yes Amy’s, not Annie’s) Gluten-Free Mac & Cheese, is a nice rack of ribs. This week I decide to go with some boneless pork ribs. I hands down like the rack of ribs way better—the boneless version wasn’t quite as juicy—but they were still pretty good, and I used the same rub recipe I got from The Pioneer Woman.

This craving for rib couldn’t have come at a better time, because I had just bought this really cool plate set to do some more shooting on. From looking at other food blogs, I can tell one method is to get out all the ingredients used to make the dish, line up the boxes, jars, and canisters, and take a picture. Alas, my kitchen is rarely clean enough to do this, so I’ve latched onto the other “photo-of-thought” where you take a small amount of spices used and “haphazardly” arrange them on a chopping board. Lemme tell you, there was no haphazard. I was in there with my basting brush trying to wrangle everything into neat little piles.

Summer break is here! I’ve sufficiently caught up on some much needed rest, thus it’s time for me to do what I assume many a blogger is doing and write the “my summer” post!

Read like a fiend

I have absolutely no excuse not to. Summer is great for reading and hobbies. Even if you are putting in mad hours at a job, you don’t have all that pesky paper work known as homework to consume your life when you’ve finished for the night. As you can see, I have a few books to preoccupy myself with. I have this habit during my breaks at The Goodwill of buying books that look interesting and then I never getting around to reading them. No longer! I’m really excited to take a peek at the two Carl Hiaasen books. I love his work! I even studied him Fall Semester during Literature Seminar. He never lets me down. Middlesex is a book I read in high school, but it was so good I’d love to read it again, which means a lot because I rarely give books a second go-around. I also have some cool yoga books in there (no, not EAT-PRAY-LOVE), and I hope to start reading bits and pieces of the Gita. It’s kind of a heavy read, so maybe I’ll chew on it like a sweet  bovine might munch on a clump of grass—slowly and deliberately. Sorry, the writer inside me likes to be silly, but really, I’ll probably do 2 pages a day and reflect back when all is finished. I also have a guilty read in there, you know, the kind of thing you bring to the beach. Bet you can figure out which one it is!  I also plan on keeping up with my poetry and writing a piece a week and submitting to a few places every month. Oh the toil’s of us writer folk.

Hone my food photography skills

This summer I’m buying a new camera and lens, but I swear I’m going to learn how to use it properly. I’m going to be sticking with the Canon family, so I’m very excited to get that security deposit check back so I can go shopping. Until then, I’ve been playing around with my little guy and seeing how I can tinker with lighting, aperture, and the “f” function.  I’m not sure what the “f” function means, but I know when I fiddle with it things get either lighter or darker in a very cool way. My user manual is AWOL so I’m kind of figuring stuff out for myself, which is honestly the best because its keeping me from becoming technologically overwhelmed.  So, I’m more of less ditzy-dancing my way into the world of photography! This blog post was SUPER helpful, and anyone else looking into food photography should go there. Taking some sage advice from the blogger, the first thing I did was go out and buy some white plates to shoot my food on. It really does look a lot cleaner. When I move into my new place I’m going to buy a little end table that is for my food photography and food photography only and plant it right in front of the window. I’m starting to realize I need to start making my fun meals for lunch so I can utilize the natural light #foodbloggerproblems.

Write a book

Yup, I’m writing a yoga book for my Capstone project, which isn’t due till next spring, but it obviously takes a few months to write, edit, and photograph a book. I’m thinking ahead! It’s going to be about arm balances and inversions, because I like living life on the edge and upside down (can you sense a possible title brewing?) Next week I start figuring out what poses I want to feature, and I’m sure you readers will all be my guinea pigs!

Besides devoting more time to the blog, those are my three biggest priorities, and I imagine keeping the list short and sweet will make these hopes more obtainable. Plus, I honestly want the chance to kind of relax this summer. I’ve been busting butt for a year, and a little chill time would be much appreciated.

Kale Chips: Shockingly Delish

I’ve tackled spinach for my salads, but when it comes to greens I generally have to take them either juiced, smoothied, or in some other indistinguishable form. I blame my grandmother who had a penchant for cooking spinach until it was goop—bleck! Plus, buying kale in stores can be overwhelming , because it comes in a pretty big bunch. I knew I wouldn’t get through all of it juicing, so I pulled up my healthy girl skivvies and branched out.

When it comes to most foods, the darker it is the more nutritious. Kale is one of those super greens that intimidates me, but I think after nearly a year and half of eating well, I might as well start forming a friendship with it. To make kale exciting I needed to keep the cooked version out of sight and mind and be inspired by, dare I say, junk food.

I’m not lying; kale chips are a-flippin-mazing! I’d seen them before in the co-op, but had written them off as a hippy-dippy counterpart that would never live up to the full amazingness of Ruffles or Cape Cod chips, like how the Newman’s version of peanut butter cups are inferior to Reese’s.

I was feeling bored in the morning, so I said “why not?!” I followed this easy recipe and 30 minutes later I was delighted by how crunchy, salty, though still pretty healthy these little green chips were. They are also super filling in a way potato chips are not. Note: prep time is much faster than 25 minutes!

It is a bit of a mind game at the beginning. Green is not a color you’re used to seeing as a chip, so you kind of have to go “it’s just a potato chip, it’s just a potato chip.” Since I used ½ the bunch of kale, these only cost $1.50 to make and I got to choose how much salt I wanted, and I really did go on the light side!

Needless to say, they didn’t survive the afternoon between me and Chris.

Beat the Bloat

Today we’re going to focus on healthy drinks.

So you have coconut water, water kefir, dairy kefir, kombucha, pure acai juice, fresh pressed vegetable juice, green smoothies, etcetera, etc. I’m not going to lie, I love the occasional kombucha, and I’m having a love affair with my juicer (sorry blender), but the real “super drink” you should be swallowing is much cheaper and easier to find. Yup, it’s good old water.

Water is absolutely amazing. It detoxes the body, makes your hair, nails and skin look fabulous, and nourishes cells. I mean, there is a reason you can go without food for weeks, but you cannot go without water for more than a few days. But, allow me to get off my soap box.  I admit drinking water can take some getting used to. Compared to all the fun flavored drinks we are surrounded by, water can seem a little ho-hum. So, I’m going to give everyone—ladies and gents—a purely vanity based reason to start chugging the clear stuff, because sometimes it’s the fear of looking bad that lights said fire under one’s cheekies.

Sick and tired of feeling bloated and paunchy? Ladies, want to see a defined waist that you are proud to swivel around at the beach in your itty-bitty, insanely overpriced bikini? Drink. Your. Water!

Okay, so bloating sucks, and before I started eating healthier I feel like I was in a constant state of bloat, carrying around a food baby that never seemed to go away. True, I think some of it had to do with the inflammation from eating all that wheat my body so greatly detested, but a lot of it had to do with eating really salty foods. Your body loves to retain salt. When you eat too much salt and not enough water you throw off a crucial balance. So, if you don’t drink enough water, when you do your body is going to grab onto it and not let it go! To counter that, despite seeming counterintuitive, drink more water! You’ll start flushing out toxins and sodium (hit the road bloat!) and your body won’t be so fearful (source).

Want proof? Okay, I have no photo evidence, so you’re just going to have to take my word for it: these past three days I’ve been drinking a lot of water and have slowly noticed my waist line moving in to create a mini-hour glass shape. This is good, because I have an insane aversion to sit-ups! Isn’t it amazing how simply drinking a little more water can cause such immediate effects?! The way you treat your insides will reflect on your outside. Lemme be blunt: eat like crap and you’re going to look like crap.

A refreshing morning pick-me-up

How does one take drinking water from being a healthy chore to a delicious, healthy chore? Easy, add some flavor! And I’m not taking about Crystal Light flavoring or that Mio junk. Think citrus. Go out and buy some lemons. Make four slices and pop it into a mason jar. The one I use is 24 ounces, so adjust accordingly. Add some filtered water and let it sit for about 10 minutes. By then you’ll have some lightly infused water that tastes great. Sip mindfully throughout the day. (I also know people who use limes or cucumbers, so try out different things!)

Things to watch out for:

Lemon water is acidic and can soften the enamel on your teeth. If this is something you think you’ll be doing on a regular basis, plunk down $2 on 100 straws and save your pearly whites. Also, don’t brush your teeth immediately afterward, because your teeth haven’t harden again. I think the benefits of drinking water this way far outweigh the cons, so just take the cheap, preventative measures.

It can be really tempting to jump on the food-rage bandwagon, and a lot of the drinks mentioned above do have great benefits. But sometimes we need to look for simplicity as we strive towards a healthier lifestyle!

Food Porn: The Best Kind of Porn

Lately I’ve been playing around with my camera. In my Food Gone Wild section I didn’t really give it enough credit. And then I started looking at reviews of it online, and I found out that for the size and price it’s a pretty impressive camera. I’ve been playing around with all the different aperture settings and making the best of the morning light. Here are some recent pictures that have been minimally edited.  I pray the kitchen in my next apartment has amazing lighting as well! I call this series, A Typical Morning– hehe

 

Recently I’ve been photographing a lot of citrus, because it looks so delicious with the right lightening. Well, eggs are also yellow (and delicious), so I thought I’d try my hand at shooting them as well. Look at that yolk! Shout out to Shadow Farms eggs for making me super happy every morning.

 

Greek Yogurt & Blueberries

As you can see, I go pretty heavy on the protein in the morning. Typically I have two eggs and a little cup of Greek yogurt with berries. For the weeks I buy my Udis gluten free toast, I would do eggs, a slice of bread, and a piece of fruit. Last night for dinner I wasn’t feeling very hungry, so I had a berry cup and a glass of red wine (pump up the antioxidants!) I couldn’t get through all the berries, so these were the leftovers. As you know, I’m a huge proponent of plain yogurt, be it Greek or regular, with fresh or frozen berries. That way you aren’t consuming the 20g-29g of sugar you would be getting with the fruit flavored kinds. Your waistline (or wherever you pack on the pounds) will thank you!

For the first time since we signed our lease, Chris and I starved. Okay, I use the term starve lightly, of course (I’m not that first world insensitive…), but for someone who eats many mini meals a day, the one day of scrounging around for food was torture. Not to mention, I spent a lot of money buying three meals out. I was so excited to have a full fridge again! The lower section has essential been turned into my greens-for-juicing shelf! Those three kiwis are a little overripe, so I plan on making some kiwi sorbet. The smaller Mason jar is my green tea and lemon toner, which has been working phenomenally! The six pack of beer is actually cider. If you are gluten free (or a hater of beer, which everyone should be—yuck), cider is your best friend. As a Vermonter I was all about the locally made Woodchuck, but recently I’ve branched out to Angry Orchard. We like to stock the fridge with lots of produce!

Things Every Gal Should Know How to Do- #419 Cook a Steak

Why leave all the fun cooking to the men. Why should they be the only gender schmoozing around the grill with a beer (or gluten-free friendly cider)? Ladies, it’s time to throw on our best outfits, let out a fierce belch, and show those men that we can be pretty and hard core. Let’s show those men we mean business!

Haha, okay. Silliness aside, a chick should know how to grill a steak. Don’t seize up; it’s just a bigger, thicker piece of meat. I admit I’ve only cooked steak twice, so I’m sure as hell not preparing to enter some down south BBQ competition, but I haven’t killed Chris or myself.

Through some heavy google-vestigation (honestly, Google, I rep you guys SO much you should be paying me!) it seems the most important thing to cooking a steak is to only flip it once. If the cut is thick just leave it alone for a few minutes. Update your e-mails; bang out a few pushups; ponder another glass of wine; flip; repeat. Don’t mess with it until you’re ready to commit!

On the topic of wine, check out this fancy bottle I got. The Burlington Wine Shop has become my new favorite destination. Not only do they have mini-tastings every Saturday (a perfect way for newbie wine-os to try out something besides, dare I say, Franzia and Barefoot*), but the wines range from 100% college affordable— $7.99 anyone?—to wealthy sugar-daddy style; Yeah, there is a $500+ mega bottle down there. Something tells me regular wine opener would not work. I really enjoyed this wine. It was initially $17.99 but on sale for $10.99. Even better, the store was having a FB 20% off promo. Not a bad steal, baby, not a bad steal!  I know nothing of this whole swirl, stir, and spit deal of wine connoisseurship, so in regular man speak I will say I could detect some coffee-esque undertones. Although I don’t encourage getting extremely plastered cooking, a few sips here and there really lightens the mood!

Okay, back to the meat:

As you can see, I like my steak a little bloody. Or, as my mom says, “I like my cow still mooing.” I used to be a well-done sort of girl, but I learned that the blood gives the beef a little bit of flavor. Go out and grab a meat thermometer if you want to ensure your steak is where you want it before slicing in.

Now, here’s where we get a tad bit healthier. We all know the term meat and potatoes, right? Well, it doesn’t mean you have to go all heavy cream and butter on your potatoes, which is totally fine for special occasions, but a little much on the regs. How about trying your hand at some baked yam fries? They are a great complex carb with minimal calories and lots of fiber. They are also full of minerals like iron, copper, potassium, and many more (source)! Check out this rather hilarious how-to on how to make some stellar, baked yam fries.

Summer is upon us, so start practicing your skills so when you are out you can impress a few people!
